Blueberry Muffins
Ingredients
1 1/2 cups (190g) all-purpose flour
3/4 cup (150g) granulated sugar
1/2 tsp salt
2 tsp baking powder
1/3 cup (80ml) vegetable oil
1 large egg
1/3 cup (80ml) milk
1 tsp vanilla extract
1 cup (150g) fresh or frozen blueberries
Instructions
Preheat oven to 400°F (200°C). Line a muffin tin with paper liners.
Mix flour, sugar, salt, and baking powder.
Whisk oil, egg, milk, and vanilla in a separate bowl.
Combine wet and dry ingredients. Fold in blueberries.
Fill muffin cups and bake for 20-25 minutes.
Cool for 5 minutes before serving.
